Ikkousha Ramen

Boiling carefully cleaned pig bone over long period of time every day, our chef conducts taste check several times a day to ensure the taste remains consistent.

Using 3 kinds of shoyu from Fukuoka, a secret recipe of more than 20 kinds of spices, and 5 kinds of fish mix. This sauce has been carefully crafted to match taste of the soup.

Our noodle are specially made by us, to enhance and match our soup. We have incooperated our umami taste not just in our soup base, but also in our noodles.

Ikkousha’s chashu are carefully seasoned and thinly sliced to ensure a perfect balance of taste between ramen & toppings – neither overpowering each other, ahieving a heavenly combination.

Umami bubbles up to produce the signature thick and creamy texture of tonkotsu as the pork bones are boiled and simmered for a long period of time. This foam can only be found in authentic tonkotsu made from slowly simmering pork bones.
